A STUDENT FROM SPLIT PRODUCED BEER FROM SEA YEAST

Beer made with sea yeast is a revolutionary product coming from our University’s Department of Marine Studies. Petar Puškarić, recently graduated Master of Science engineer in ecology and marine protection, produced it with the help of his mentor assist. prof. Marin Ordulj.

This unique beer, produced from seawater yeast is called Sea cucumber. It is unique because Petar Puškarić succeeded in what no one in the world has done so far. At least according to official scientific literature.

The story started when student Puškarić suggested assist. Prof. Ordulj that they try to produce beer with sea yeast.

- These were uncharted waters for me as well, as I have not studied yeast. Puškarić really immersed himself in researching methodology, isolating and breeding yeast, as the whole process seemed like a 100-meter hurdles race. That is to say, we only had few months to prepare the entire thesis. The isolation process and fermentation test presented the said hurdles. Yeast had to be isolated, multiplied, and then identified – prof. Ordulj described the process.

They managed to produce 40 bottles of "sea beer" tasting mildly sour, with a hint of fruit aromas.

Producing beer from sea yeast is not cheap, and the entire production was secured by faculty funds. The "Sea cucumber" is just the beginning of further developing beer from sea yeast, for which slightly bigger funds will be required.
